Migration Assistant For Mac To Mac

I have an Imac (that runs snow leopard). I got a new macbook air and wanted to use migration assistant to set up some of my applications. The utility only allows me to select the entire applications folder.
1. Is there a way to transfer one application at a time? Or just a specific application rather than all?
2. Also, is there a way to transfer a single document or folder using migration assistant?
3. Lastly, since the macbook air has neither a firewire or ethernet port, is it possible to do the transfer via USB cable? Otherwise, wireless is the only option--I'm just afraid of dropouts and interruptions.

Make sure both Macs are running the latest version of their operating systems. Launch Migration Assistant on both Macs and click Continue on both. On the Mac with the user you want to move (let’s call this account Alice), choose To a Mac and click Continue.
